BROOKE'S BEETROOT (BETTER THAN THE TINNED STUFF!)

INGREDIENTS:

 3 medium beetroot (trimmed and washed)    
     2 Tablespoons sugar
     ¼ cup boiling water
     ¾ cup malt vinegar
     ½ teaspoon salt
     Black pepper

DIRECTIONS:

Put beetroot into a pot.

Cover with cold water, bring to the boil & cook for 45 minutes or until beetroot is tender.  

Drain, then rinse under cold running water.  
 
Top & tail then slip skins off.  

Slice & place in a serving dish or jar.  

Dissolve sugar in boiling water, add vinegar, salt & pepper to taste.
Pour over sliced beetroot.

Serve cold.  

(if you don’t like a strong vinegar taste – increase water & decrease vinegar by same amount to tatse more like tinned beetroot.)
