NIKKI'S NON DAIRY BEETROOT DIP

INGREDIENTS:
     2 beetroot
     1 cup cooked chickpeas
     3 Tablespoons tahini
     ½ cup water
     ½ teaspoon ground cumin
     2 cloves crushed garlic
     Juice of ½ lemon 
 
DIRECTIONS:
Place beetroot in saucepan & cover with water.
 
Bring to the boil & simmer till beetroot is soft. (approx 45 mins).  
Drain, let cool then peel.
 
Place all ingredients into processor & process until smooth & thick.
 
Serve with crusty bread, pita chips etc
