BETTY'S BANANA & LIME PANCAKES

Serves 4


INGREDIENTS:
 
500 grams self raising flour
1 teaspoon baking powder
Pinch salt
½ cup sugar
3 lime, juice & zest
3 eggs, separated
1 ½ cups milk
1 Tablespoon butter
2 bananas, peeled & sliced .
2 Tablespoons honey
 
Lime & coconut yogurt:
150mls coconut cream 
½ cup Greek yogurt 
1 lime, zest of 
 
DIRECTIONS:
 
Sift flour, baking powder & salt.
Mix in sugar and lime zest.

Stir in the eggs & enough milk to make a smooth batter.
Leave to rest for at least 1/2 hour before cooking.
 
On a medium-hot frying pan or hot plate, melt the butter.

Drop spoonfuls of the batter, spreading out with the back of the spoon.

Lay pieces of banana on top.

Cook for 2-3 minutes each side, flipping over when one side begins to brown.

Cook 2-3 small pancakes per serving.
 

Meanwhile, in a small saucepan, heat together the lime juice & honey, until the honey has melted & the liquid has reduced by half.
 
Serve the pancakes stacked one on top of each other drizzled with orange honey sauce.

Accompany with lime & coconut yogurt.
