PAMELA'S PUMPKIN, ORANGE & DATE CAKE

INGREDIENTS:

200 grams vegetable oil

1 cup caster sugar

1 Tablespoon orange zest

3 eggs

1/4 cup orange juice

3/4 cold cooked mashed pumpkin

1/2 cup finely chopped dates

2 cups rice flour

2 teaspoons baking powder

1/3 cup coconut cream

DIRECTIONS:

Preheat oven to 180°C 

Mix oil and sugar in a bowl.
Add eggs and mix well.

Stir through zest, dates and pumpkin.

Sift flour & baking powder together & add alternatively with coconut cream to mix - to give a soft consistency.

Cook for 60-70 minutes.
