CONNIE'S CREAM OF ASPARAGUS SOUP

Serves 6

 

INGREDIENTS:

First 4 ingredients:

700 grams asparagus

1 stalk celery, thinly sliced

1 small onion

3 cups chicken stock

Second - then add:

1/8 teaspoon dry mustard

Salt and pepper to taste

Third - add:

1 cup light cream

Lastly-serve with:

Slices of lemon

 

DIRECTIONS: 

Combine the first group of ingredients in saucepan,
bring to boil & simmer until asparagus in tender (about 10 minutes).

Pour into blender/food processor, add mustard, salt & pepper & blend until smooth.

Return to saucepan, add cream & heat.

Serve with slices of lemon.
