CARLOTTA'S COURGETTE & CITRUS CARROTS

Serves 4-5

Ingredients:

1 Tbsp oil

3 large carrots (sliced)

3 courgettes (finely cut)

1 Tbsp orange rind (grated)

2 Tbsp orange juice

Freshly ground black pepper

 

Method:

Heat the oil in a large frying pan or wok.

Add the carrots & courgettes.

Stir for 4-5 minutes or until the carrots are tender but still slightly crisp.

Add the orange rind and juice.

Mix well.

Serve immediately.
