CATHERINE'S COURGETTE & TOMATO GRATIN

INGREDIENTS:

500 grams tomatoes

250 grams courgettes

250 grams potatoes

1 medium onion

2 Tablespoons fresh majoram

3 Tablespoons olive oil

50 grams cheddar cheese

 

DIRECTIONS:

Slice the tomatoes, potatoes & onion in 1/2cm slices.
Chop the fresh marjoram.

Arrange the vegetables in layers in an ovenproof dish, sprinkling the marjoram throughout.

Pour over the olive oil & top with grated cheese.

Bake at 180°C for 50 minutes until golden brown.
