GAIL'S GINGER & ORANGE FRUIT LOAF

INSTRUCTIONS:

Syrup:

½ cup water

½ cup orange juice

1 cup sugar

1 cup orange chopped up small peel and all

1 teaspoon ground ginger & approximately 2 tspns of fresh ginger finely chopped

Cook together until just boiling

Leave to cool before adding to dry ingredients.

 

Dry mixture:

1 cup plain flour

1 cup wholemeal flour

1 heaped tseaspoon baking powder

1 heaped teaspoon baking soda

 

Add cooled syrup mixture to the dry ingredients, mix well, add in 1 beaten egg – mix & pour into loaf tin.

 

Bake at 180◦c for approximately 45mins.
