BRENDON'S BROCCOLI, CAMEMBERT & AVOCADO BAKE
INGREDIENTS:
1 head Broccoli
3 eggs
1 spring Onion
1 Tablespoon cornflour
1 Avocado
300 ml cream
1 teaspoon chicken stock powder
Breadcrumbs
1 Camembert
½ cup milk
Lemon pepper
DIRECTIONS:
Cut broccoli into florets & steam until just cooked.
Slice avocado & camembert.
Beat together the eggs, cream & milk, then add the chopped spring onion.
Season the egg mixture with the chicken stock, lemon pepper & add the cornflour.
Grease an ovenproof dish & shake the breadcurmbs around the bottom & sides of the dish.
Arrange the broccoli on the bottom of the dish, then the avocado & then the camembert on top.
Pour the egg mixture all over.
Bake in an oven preheated to 1800 for 40 minutes.
Serve in wedges with salad.
