CAITLIN'S COURGETTE SOUP

INGREDIENTS:

15 grams butter

1 onion (chopped)

700 grams courgettes (sliced)

2 1/2 cups chicken stock

1 cup cream or milk

1 teaspoon dried basil or 2 Tablespoons fresh basil

1 teaspoon salt

Black pepper

 

DIRECTIONS:

Melt butter, add chopped onion & cook gently - don't brown. 

Add courgettes & chicken stock.

Cook until vegetables are soft.

Blend in a whiz, adding basil, salt & pepper. 

Add cream or milk & return to pot - heat gently (Do not boil).
