BEN'S PURE PORRIDGE

INGREDIENTS:
1 cup of whole oats (preferably soaked overnight)
(For a 100% gluten free option replace oats with whole soaked quinoa grains)
1-1 ½ cups of water (if you soaked the oats you may use less water)
1/2 cup coconut cream
½ teaspoon cinnamon
2 dates chopped
1 teaspoon honey
¼ teaspoon salt
½-1 banana sliced
¼ cup blueberries & raspberries (fresh or frozen)
Yoghurt, coconut yoghurt or kefir yoghurt to serve
 
 
 
 
 
DIRECTIONS:
 
Rinse soaked oats & put in a medium saucepan with water, coconut cream, cinnamon & salt.
 
Bring to the boil & then add the sliced banana & dates.

Turn down the heat & gently simmer.

Reduce the heat & 
leave to cook for 10-15 minutes, until the oats are soft & sticky.
 
Stir occasionally so the porridge doesn’t stick to the pan.

Near 
the end of cooking stir through the berries & cook to your
liking.

Serve hot with yoghurt, coconut yoghurt or kefir.

NB: You can use full raw milk in place of the coconut cream if you prefer.
