RACHEL'S RED CABBAGE STIR-FRY

Serves: 6 as a side dish
Preparation: 15 minutes
Cooking: 15 minutes
INGREDIENTS:
1 red cabbage, thinly sliced
4 celery stalks, sliced
1 cauliflower, cut into florets & blanched
1 broccoli, cut into florets & blanched
2 handfuls of small spinach
4 carrots, finely sliced
2 Tablespoons olive oil
1 red capsicum, chopped
1 red onion, diced
1 teaspoon crushed garlic
1 teaspoon grated ginger
DIRECTIONS:
Heat oil in a large frying pan or wok, add garlic, ginger & onions, cook until onions are soft but not brown
Add cabbage, carrots, celery, broccoli, cauliflower & capsicum.
Cook for around 5 minutes.
You can add a little water if you need to stop the vegetables from sticking
Add spinach leaves & cook with the lid on for about a minute
Serve immediately with rice
