WARM BROCCOLI SALAD

INGREDIENTS:
2 head of broccoli – cut into florets
4 rashers of bacon
Feta cheese
Pine Nuts
12 Black Olives (optional)
Olive Oil
DIRECTIONS:
Grill Bacon & cool. Cut into strips & place in a large bowl.
Break Feta into bite sized chunks, & add to bowl.
Sprinkle with pine nuts & olives.
Blanch Broccoli florets in boiling water for 30 seconds, then drain.
Add warm Broccoli to bowl & gently mix, taking care not to break up the Feta.
Drizzle With Olive Oil.
Serve (Ideal With racks of lamb!)
