BELINDA'S CREAM OF BROCCOLI SOUP

INGREDIENTS:
700 grams Broccoli
1 thinly sliced Celery stalk
1 small onion
3 cups Chicken Stock
1/8 teaspoon dry mustard
1 cup Light Cream
Thin slices of Lemon
Salt & Pepper to taste
DIRECTIONS:
Combine Broccoli, Celery, Onion & Chicken stock in a saucepan, bring to boil & simmer until broccoli is tender (About 10minutes).
Pour into blender/food processor, add mustard, salt & pepper, blend until smooth.
Return to saucepan, add cream & heat.
Serve with thin slices of lemon.
Serves 6
