PENNY'S PUMPKIN SOUP

INGREDIENTS:
25 grams butter
2 Onions chopped
2 cloves Garlic chopped
1 teaspoon Nutmeg
1 teaspoon Cumin
2 Chicken Stock Cubes (crumbled)
3 Cups Water
1 Pumpkin (1kg) peeled & chopped
½ Cup Sour Cream
1 teaspoon chopped Chives
DIRECTIONS:
Heat the butter in a saucepan,
Add onion & garlic, cook until onion is transparent.
Add cumin & nutmeg & cook, stirring, for 2 minutes.
Add stock cubes, water & pumpkin.
Cover & simmer for 15 minutes, until the pumpkin is tender.
Puree soup in blender of food processor.
Reheat to serve: top with sour cream & sprinkle with chives.
