STEVEN'S SPICED CURRIED ONIONS

INGREDIENTS:

2.5 kilo large onions

½ cup salt

500 grams brown sugar

1 Tablespoon ground cloves

1 Tablespoon ground allspice

2 Tablespoons flour

1 teaspoon mustard

1 Tablespoon curry powder

2 teaspoons turmeric

4 ½ cups malt vinegar

 

DIRECTIONS:

Coarsely chop onions. 

Place in a large bowl & sprinkle with salt.

Cover with water & leave overnight.

Drain onions then pack into hot clean jars.

In a saucepan combine remaining dry ingredients slowly stir in vinegar.

Bring mixture to the boil & pour over the onions.

Cover jars tightly when cool.

This is ready to use in about 2 weeks.

Makes about 4 litres.
