BRIAN'S BEEF & KUMARA LASAGNE
Serves 8-12
INGREDIENTS:
Lasagne Sheets
small pack of Mince
1/2 cup Grated Carrot
1 cup Kumara, cooked & mashed
50 grams Butter
3/4 cup Flour
1 cup milk
1 cup Grated Cheese
Salt & Pepper
DIRECTIONS:
Make the mince:
Fry Mince, grated carrot & grated kumara in the frying pan with 2 Tablespoons olive oil & 1 Tablespoon salt.
Cook, turning often, for 20 minutes.
Add thickening (1/2 cup water & 2 Tablespoons flour- put into a shaker & shake to mix)
Preheat oven to 180*C.
Grease a 30x25cm (base) dish.
(While mince is cooking)
Make the cheese sauce:
Melt butter in a pot over medium heat, add flour & mix well.
Return to heat & add 1 cup milk & whisk until all combined.
Keep whisking until boiling.
Remove from heat & add grated cheese & stir well.
Add salt & pepper, set aside.
In a prepared dish:
Pour 1/4 of the mince mixture into the bottom.
Cover with 1 layer of lasagne sheets.
Top with 1/4 of the cheese sauce.
Repeat this twice.
Cover with extra cheese & sprinkle with parsley if desired.
Bake in hot oven until browned & boiling.
