RED CABBAGE, APPLE AND CRANBERRY SALAD

This warm winter salad will brighten up any meal.
 
INGREDIENTS
75g sweetened dried cranberries
1/2 cup (125ml) apple juice
30g unsalted butter
2-3 pink lady apples, cored, sliced
1/2 large red cabbage (750g), shredded
1/2 cup chopped flat-leaf parsley
1/2 cup toasted walnut halves
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1/2 cup (125ml) walnut oil
 
METHOD
1.Soak cranberries in apple juice for 1 hour. Drain, reserving juice. Heat butter in a frypan over medium heat, add apple and toss for 2-3 minutes or until golden. Place in a bowl with cabbage, parsley, nuts and cranberries. Add reserved juice to pan and cook for 1-2 minutes over high heat to reduce by half. Whisk juice together with vinegar, mustard and oil, then season and toss through salad.
