KELLY'S KUMARA & PUMPKIN BAKE

Ingredients:

1 kg kumara, peeled & grated

1 kg pumpkin, peeled & grated

6 silver beet leaves, thinly sliced & chopped

½ cup peanuts, dry roasted & chopped

1 cup lite coconut milk

black pepper to taste

 

Instructions:

Preheat oven to 180°C.

Line a baking dish with aluminium foil, leaving enough to fold over the top.

Combine all ingredients in a bowl & mix well.

Place mixture into the baking dish & fold over aluminium foil to make a parcel.

Place in preheated oven & bake for about 1 hour or until cooked.
If desired, open foil for last 15 minutes to allow top to brown.

 

Variation: Use floury, fluffy potatoes (Agria) instead of the kumara.
