TABITHA'S TOMATO RELISH

INGREDIENTS:

1.5kg tomatoes (blanched, skinned & quartered)

4 onions (quartered)

2 Tablespoons salt

To Cook

2 cups brown suagr

2 1/4 cups malt vinegar

3 chillies

Paste

1 Tablespoon dry mustard

1 Tablespoon curry powder

2 Tablespoons flour

1/4 cup malt vinegar

 

DIRECTIONS:

Put tomatoes & onions into a non-metallic bowl.

Sprinkle with the salt & leave for 12 hours.
Drain off liquid.

Put drained vegies, together with sugar, vinegar & chillies into a pot & boil gently for 1 1/2 hours.
Stir frequently.

Mix dry mustard, curry powder, flour & vinegar together to a smooth paste.
Stir into relish.

Boil for 5 minutes. 

Pack into sterilised jars.
