ROSIE'S SPICY CINNAMON & APPLE SCONES

INGREDIENTS:
 
3 cups Flour
6 teaspoons Baking powder
3 teaspoons Cinnamon, plus extra, for sprinkling
¼ teaspoon Salt
75 grams Butter
1½ cups Milk
4 Apples, peeled, cored & cut into thin slices
1 sprinkle Raw sugar, a generous one, & extra milk, for glazing
 
 
DIRECTIONS:
 
Heat oven to 220C. 
 
Sift flour, baking powder, 3 teaspoons cinnamon & salt into a bowl. 
 
Cut butter in until the mixture resembles fine breadcrumbs.
 
Add 1 cup milk & mix quickly with a knife to a soft dough, adding more milk if required. 
 
Knead a few times.
 
Press the dough out on floured bench & cut into two. 
 
Place one half on to an oven tray dusted with flour & cover with ⅔ of the apples. 
 
Press the remaining dough on to the apples to cover & spread the remaining ⅓ apples on top.
 
Cut into 12 even-sized pieces. 
 
Brush the tops with a little milk, sprinkle with a generous amount of raw sugar & a little more cinnamon, if wished. 
 
Place in top half of the oven to bake for 15 minutes or until golden brown & cooked through. 
 
Cooling on a rack will give you crisp crusts, while covering them with a clean tea towel will give a soft scone. 
 
Serve warm with a tangy jam & freshly whipped cream.
