BEETROOT, CARROT & APPLE SALAD

INGREDIENTS:
 
2 beetroot, peeled & grated
3 carrots, peeled & grated
2 apples, grated
¼ cup orange juice
¼ cup oil
1 tsp paprika
¼ tsp ground cumin
 
DIRECTIONS:
 
Toss together grated beetroot, carrots & apples in a large bowl.
 
In a separate small bowl mix the orange juice, oil, paprika & ground cumin. Make sure there are no lumps of spices in the dressing.
Pour the dressing over the salad & toss to combine.
 
Serving suggestions:
• with a cheese & tomato toasted sandwich
• with barbecue chicken & corn
• in a lettuce leaf.
