CORIANDER DIP WITH VEGETABLE STICKS

INGREDIENTS:
Makes ½ cup
 

1 cup coriander leaves

¼ cup extra virgin olive oil

2 Tablespoons pine nuts


DIRECTIONS:

 
Place all ingredients in a blender & process until coriander is finely chopped.
 
Add more oil if necessary.
 
Serve with vegetable sticks, e.g. lightly cooked asparagus, green capsicum, celery, beans.
