OLGA'S ONION DIP

INGREDIENTS:

4 onions, finely diced

1 Tablespoon olive oil
-
1 cup water
-
2 Tablespoon white wine vinegar
-
2 teaspoon onion powder
-
1/3 cup light sour cream
-
1 cup unsweetened yoghurt
DIRECTIONS:

Place onion & olive oil in a heavy frying pan.

Heat slowly & saute very gently for approximately 1 hour, stirring often.

Add water to pan & bring to a very gentle simmer.

Simmer until all the water has evaporated.

The onion should be a deep, light golden colour.

Add onion powder & vinegar & reduce to a paste.
-
Allow to cool completely.

Mix onion mixture with sour cream & yoghurt.
-
Refrigerate until ready to serve.
