CARAMALISED PEAR WITH RADISH SALAD

Ingredients:
 
20g butter
olive oil
2 pear
4 radishes
small bunch of basil
1/2 cup of roasted almonds
bag of lettuce/salad leaves
1/2 cup grated Parmesan cheese
balsamic glaze to taste (bought or home made)
 
Instructions:
 
Slice the pear into 1cm wedges. Trim the radish and thinly slice. Pick the basil leaves and thinly slice. Roughly chop the roasted almonds.
 
In a large frying pan, heat a drizzle of olive oil and the butter over a medium heat. Add the pear in a single layer and cook, turning occasionally, until softened, 8-10 minutes. Transfer to a large bowl and set aside to cool slightly.
 
Add the radish and mixed salad leaves to the pear and toss to combine. Season to taste.
 
Top the pear salad with the basil, roasted almonds and grated Parmesan cheese. Drizzle with the balsamic glaze.
