QUEENIE'S QUEEN CAKES
125 grams butter, softened
1/2 cup caster sugar
1 teaspoon vanilla extract
1 cup plain flour
2 teaspoons baking powder
1/2 cup sultanas
finely grated zest of 1 small orange or lemon
1/4 cup full cream milk
icing sugar for dusting (optional)
Heat the oven to 180C.
Place paper cases in a 12 hole muffin tin
Cream the butter & sugar in a bowl until light & fluffy.
Add the eggs, one at a time, beating well after each addition.
Add the vanilla extract.
Sift the flour & baking powder over the creamed mixture.
Add the sultanas & zest.
Gently fold ingredients together along with milk.
Spoon mixture evenly into the paper cases & then place in the oven.
Bake for 15 minutes until golden & the cakes spring back to the touch.
Remove from the oven & place cakes on a wire rack. Sprinkle with icing sugar if desired.
Store in an air tight container once cooled.
