SANDRA'S SHREDDED BRUSSEL SPROUTS WITH BACON

INGREDIENTS:
 
500 grams Brussels sprouts, cored & shredded
3 spring onions, finely sliced
3 rashers bacon, roughly chopped
1/4 cup pine nuts, toasted
25 grams butter
Freshly ground black pepper & salt to taste
 
 
 
DIRECTIONS:
 
In a large fry pan cook the bacon until crisp & chop into smaller pieces
 
In the same pan (without washing) melt the butter then add the Brussels sprouts & spring onions
 
Cook over a medium heat until the sprouts are tender, about 10-15 minutes
 
Season with salt & pepper, mix through the bacon & pine nuts just prior to serving
