TOMMY'S TOMATO RELISH

INGREDIENTS:

2 kilograms tomatoes, chopped

4 onions, chopped

2 tablespoons salt

1 litre white wine vinegar

1 cup sugar

1 cup brown sugar

2 tablespoons curry powder

1/2 tablespoon mustard powder

1/4 cup flour

1/2 teaspoon cayenne pepper

500 grams peaches, diced (optional)

chilli pepper, chopped (optional)

 

DIRECTIONS:

Place the tomatoes in a non-metallic bowl.

Add the onions and sprinkle with salt. Cover & leave overnight.

Drain the liquid off the following day before placing in a pot with the vinegar, sugars, spices & curry powder.

Add the peaches if you are using those.

Mix the mustard & the flour to a paste with a splash of vinegar.

Add to the pot before bringing the mixture to the boil.

Stir until the sugar disolves.

Boil for 1 to 1 1/2 hours or until the relish thickens.

Pour into a sterilised jars & seal when cold.
